Afghan Firnee (Cardamom and Pistacho Pudding)

Firnee is a traditional Afghani milk and cornstarch pudding flavored with rosewater and cardamom and topped with crushed pistachio nuts. Some Firnee recipes include almonds and some do not include rosewater but all of them are made with milk, cornstarch, sugar and cardamom, and all are topped with pistachio nuts. This recipe contains milk, cornstarch, and sugar, it is flavored with rosewater cardamom, and a little salt, and when the pudding is cold it is topped with ground pistachio nuts.

Firnee Ingredients
- 2 cups of cold whole milk
- Small pinch of salt
- 1 cup of granulated sugar
- 4 tablespoons of cornstarch
- 1 teaspoon of ground cardamom
- 1 capful of rosewater
- 1/4 cup of finely ground pistachio nuts

Firnee Instructions
Combine the cold milk, sugar, cornstarch, cardamom, and rosewater in a saucepan and blend them well using a wire whisk. Bring the mixture to a boil over medium heat, stirring constantly to prevent a skin from forming on the bottom of the pan. When the mixture comes to a boil and begins to thicken pour it into a shallow round serving bowl, individual ramekins, or individual custard cups and chill until cold and firmly set. Sprinkle puddings with the ground pistachio ]nuts and serve. If you made pudding in a shallow around serving bowl, cut it into wedges to serve.
